Hello,
How create a CL 5 scout / creature handler or beast master character (maybe an Utai)? How would you do it? Is it possible without taking the jedi class?

he should have at least Persuaion and Survival trained and in UR on page 65 you will find a paragraph about Animal Companions. for the "control" of the beast i would advice the Proctocol rules in SGtD.

If you're looking at the Charm Beast and Command Beast talents (SECR 107) your GM could allow you to select those as some alternative Dathomiri Witch tradition. Multiclassing into Jedi (remember, this DOES NOT make you a "jedi" character) would let you pick up Force Sensitivity as a starting feat which in turn allows you to take tradition talents such as the two I mentioned earlier. As a three step progression you could start in Scout (which may be the best class for the overall concept) and multiclass into Jedi picking up Force Sensitivity and taking Charm Beast as your talent; the next level is another one in Jedi where you could get Skill Training in UtF (now Persuasion for beasts doesn't need to come from another source) and you follow that up with another level in Jedi picking up Command Beast. I seem to recall seeing similiar talents (or feats) in one of the other books but which one escapes me at the moment.
Without being able to find the other book and assuming GM permission I'd build the CL 5 "animal master" as a Scout1/Jedi3/(either class+1 or soldier1) or something similar for a PC. For an NPC I may go NH8/Jedi1/Soldier1 although this leaves me at just CL4.
What do you want the character for? Exactly how to "build" such a character depends on how you plan to use him if he's a NPC and for a PC depends on what your goals and overall vision for the character are mixed in with what the campaign expects.

JATM has a Beastwarden talent tree in the Force Adept section. Much of the talents are the same as Dathomiri Witch, but that doesn't help your level 5 PC. IIRC the Felucian Shaman (FUCG, Force Traditions section) has access to the Dathomiri Witch tree, for what it's worth.
The Utai species (TotG, look alphabetically under Varactyl/Varactyl Wrangler) have a unique species trait regrading persuasion vs. beasts and IMO are well-balanced for players.
This is from a player in my DoD campaign. He's an Utai and gained access to the Charm Beast talent through the Felucian Shaman in Episode I.
Scout 1 Terrain Guidance, Mounted Combat Scout 2 Point Blank Shot Scout 3 Long Stride, Covert Operatives Jedi 1 Charm Beast, Force Sensitivity (edit) Soldier 1 Command Beast
If you want more effective beast-riding Scout talents, the Mobile (or Master...?) Scout tree in UR has some good ones and Long Stride can be replaced.

That's not bad even if I'm not entirely sure what Covert Operatives does and don't really like Mounted Combat.
Covert Operatives is the team Stealth feat, and in addition the competence bonus it reduces penalties to moving => your speed by 2. My player has a mind of his own and tends to pick talents / feats that end up not suiting the character much and so every few levels I let him drop a talent or feat that ends up not working well. He very rarely uses my build suggestions, but I like him that way because he is one if the best role players I know.

Quite.
And actually Command Beast is my own edited suggestion. At level 5 he took Scout 4 and Precise Shot, and at 6 he took Scout 5, for which he selected Beast Trick from KotOR 53 and Force Training.

Thanks for these good ideas and advice.
I said my concept: the character through the wild planets and the unknown regions. He captures the wild beasts to sell in the arenas of combat. He also trade with individuals seeking a trained pet. He joined a group of explorers of the Republic (1 scoundrel pilot captain, 1 independant protocol droid, 1 soldier field medic, 1 explorcorps worker (jedi)). He is paid to develop knowledge and skills in the service of the team while continuing to make his trade with the agreement of the captain (which takes a percentage of sales, of course).

You have all you need in the posts above, but don't forget to pick up Evasion as a Scout talent at least if you are to use your "pets" as mounts sometime. Force-users on rancors tend to draw heavy firepower...
