Maybe they'll have to fight off a wookiee grinch who seeks to ruin Life Day ...
"Rhharrumbugh!".
What would be interesting is to make Mace one of three wise men to visit a young child with a messianic destiny: Obi Wan, Yoda and Mace meet up on Tatooine and visit Luke on his 3rd birthday.

Okay...here's what I ended up running. See if you can spot Mace Windu, and cookies to the person who can list the most references to other holiday stories.
The party involved 2 PCs, a Jedi survivor of Order 66 we'll call "Isa" and a Tapani Baroness we'll call "The Baroness": "It’s a Wonderful Life Day”
Departing their last adventure on the tropical world of Rion, where they unleashed an ancient sunken Sith vessel in the lagoon and fought a Sith Lord who had been in stasis for thousands of years, the party (the Tapani wasn't introduced yet, but the jedi listed above is among them, all the other PCs being turned into NPCs while their players were away for the holidays) made haste for anywhere but Rion. Those who had been exposed to the lagoon water became sick from microbes that had been mutated by the Dark Side nexus that had formed around the sunken Sith vessel (namely, the characters whose players were away for the holidays). The Captain of the ship (a PC-turned-NPC for this session) knew of one person who could help him – and old “acquaintance,” the beautiful but no-nonsence Dr. Laré Tote, a xenobiologist on the run from the Empire for refusing to conduct experiments on alien POWs after the Clone Wars.
In a hidden clinic set up for disenfranchised aliens in an forgotten food warehouse, “Bayt Lahm’s House of Meat,” at the foot of the Starlight Hotel in a section of Imperial Center’s Senate District that had been hit particularly hard during the Battle of Coruscant, Dr. Tote met with the Baroness (PC), Senate Representative of one of the Tapani Noble Houses, who secretly helped disparate anti-Imperial movements in an attempt to organize them. The Baroness negotiated an arrangement to deliver bacta to the clinic in exchange for information leading her to any parties sympathetic to her anti-Imperial cause.
Meanwhile, approaching Imperial Center, the other PCs discovered that the weather satellites had been shut down for "security reasons," exposing the planet to the wintry climate of the season. Landing amid enormous snow drifts and sub-freezing temperatures, the crew touched down in the underbelly of Imperial Center and, bringing their ill crewmembers to the hidden clinic, encountered some Wookiee Life Day revelers donating one of their red robes to an addled vagrant laying among the garbage who had already lost an extremity, presumably to a previous treatment for frost-bite. Isa (the Jedi PC) thought she recognized the dark-skinned, tough-talking, one-handed vagrant, despite his long, wooly white hair and beard. She and the ship captain carried him to the clinic, where Dr. Tote gave the captain a welcome as cold as the unmodified climate.
Shortly after the medics treated the crewmembers for their various afflictions, a Wookiee named Tektonna brought to the clinic his pregnant wife Deiparra, who had contracted a dangerous pelvic infection from a rare mycoplasmic bacteria that was resistant to bacta and required an antibiotic that was simply unavailable without access to the proper channels. The Baroness arranged to have a shipment of the antibiotic delivered, but some immediate treatment was needed in the meantime, before the birthing of the Wookiee cub. From her service at a Republic Mobile Surgical Unit during the Clone Wars, Isa recalled a medicinal resin used to treat infections contractd by wounded Wookiees at the Battle of Kashyyyk derived from the sap of the planet’s indigenous wroshyr tree. Just as they concluded that finding such a tree so far from the Wookiee homeworld was hopeless, the addled vagrant, who identified himself as “Aloymacius Melchoringle,” informed them that he knew of a penthouse condominium on 555th Avenue, on the Senate District’s East Side, that featured a wroshyr Life Day tree on its large balcony.
Setting off in the Baroness’s aircar, the vagrant, Isa and the Baroness made their way to the Orient Towers, where they infiltrated the momentarily unoccupied penthouse suite. On the enormous outdoor balcony, they found a landscape containing many examples of the flora and fauna of Kashyyyk, including a large pool with a hidden menace beneath the frozen surface. As they attempted to extract the sap from the wroshyr tree, a wily Rodian burglar named Grinjo scaled the condominium tower with the aid of his tessellated arboreal binjinphant Max, making his way to the penthouse balcony to steal the aurodium ornaments from the tree. Just as Grinjo discovered the trio and drew his weapon to attack them, Szolga, the Toydarian majordomo of the Wookiee crime lord known as “The Chieftain,” arrived, and a blasterfight erupted between the Toydarian and the Rodian, with the vagrant, Isa and the Baroness caught in the crossfire! To save Isa from a fatal blaster bolt, the vagrant tackled her onto the frozen pool, causing the ice to crack and unleashing an enormous anakkona, a voracious, scaly creature with a fang-filled maw large enough to swallow an aircar. The Baroness and Isa helped subdue the Rodian as hotel security droids arrived to contain the unleashed wildlife. As the Baroness’ droid-driven aircar arrived to airlift them away, the anakkona, rose from its watery hiding place and swallowed the vehicle whole, stranding them in the tower looming over the impassable, snowy landscape.
Alerted to the intrusion into his penthouse condominium, “The Chieftain” arrived, a large, scarred and scalped Wookiee who was none too happy to find the intruders there. The Baroness explained the reason for the intrusion by her and her traveling companions – to save the life of the Wookiee mother who needed the medicinal resin of The Chieftain’s wroshyr tree. Moved by her plight, the Chieftain offered the trio two containers of the aromatic tree resin and the sack of aurodium ornaments to donate to the clinic. Returning from the East Side on three kybucks, fleet-footed ungulates imported from the Kashyyyk veldts, the trio followed the bright neon star-shaped beacon atop the Starlight Hotel, leading them to the makeshift maternity ward in the food storage facility in which Deiparra was about to give birth. There, the three intrepid travelers presented the gifts of gold and aromatic resin. Once the infection was neutralized from the processed resin, Dr. Tote delivered the couple’s cub, Chehocchua, a young male Wookiee that Isa sensed was strong in the Force. (Then we had an epilogue the following day...) Word reached Dr. Tote that the aircar carrying the bacta that the Baroness had procured for her clinic had crashed into a snow drift on the surface about a half-klick away. Isa and her husband (a Falleen scout NPC) set out to retrieve the bacta and found a Force Adept named Garmi Kanjusa, who had used his mystical command over fire to turn a snow dune into an igloo-like shelter. There, Garmi taught Isa how to command the element of fire (so she could take Convection when she leveled up to 12th level and be an even more lethal martial artist). Approaching Imperial sentry droids drove the trio out, and they set back off to find the lost bacta shipment. Once they located the downed aircar, they flew it back to the clinic. There, Garmi expressed his desire to leave Coruscant and find some remote world where he could rule over the primitives as a god. Isa tried in vain to convince him otherwise and, when he ignored her, she severed him from the Force.
From there, the game evolved into a rip-off the The Last Airbender, but fun was had by all anyway.

Mace got zapped a bit, but he was a major Jedi master. I figure it would take more than defenestration to bump him off; I can TOTALLY see Sam J. appearing as a decrepit, broken-down tutor to the main "PCs" in the upcoming TV show. Eh, if it is in fact still happening.

Honestly, I'm on the fence about Mace Windu being alive. On one hand, there is no evidence either way to suggest whether or not he's truly dead (I come from the old school "If you can't find/don't see a body, assume they ain't dead. Even then, test the remains you do find to make sure that no one pulls a fast one on you" belief system). On the other hand (uh...no puns or bad jokes intended), would it be awesome to see him living and helping out Jedi or other (more than likely innocent) people around the galaxy? Heck yes!!!
By the way, what is this "upcoming live-action TV series" you speak of?

i always just go with him being dead and have him show up at random points afterwords as a force ghost to annoy palps with his helping the players from the other side; that way the players whom liked him get to have a decent amount of encounters with him and yet he remains canonically dead

Since they “resurrected” Darth Maul, who was supposed to be DEAD, they can bring anyone back, including Mace. In Star Wars “logic,” if you can survive being severed in half, you can probably survive getting Force Lightning-ed out the window of a high-rise building.
All it takes is some “writer” to say, “Hey, let’s bring Mace back!”
...and the corporation rejoiced. And the people moaned.
