Playing with 6 Characters run by 3 people is pretty tough especially if its the first time you're DMing. With 3 Players, it may be better to create an NPC to fill in the missing Rule, typically a Support Role is good so the Player Characters can hog the limelight. This character should not be very char-oped, IMO, but enough to fill in the missing role.
An alternative is to provide 2 Hirelings (see DMG2). That should fill things out without providing too many Power Options and clog up the combat time, and the Hirelings probably won't be able to hog the limelight.
