My first run through the epic storyline will be a Human Fighter(multiclass Avenger)/Pit Fighter/Chosen of Tempus (might choose Kord since Kord=Tempus and I like Kords Test of Strength utility more than Tempus's Glare)
Probably my second character to play through epic will be my Human Rogue/Shadow Assassin/Deadly Trickster
I probably won't play epic more than twice, but I would like to retire the rest of my characters as:
Half Elf Paladin of Tymora/Champion of Order/Harper of Legend (Just have to join the harpers somehow)
Elf Avenger of Selune/Favoured Soul/Chosen of Selune
Kalashtar Cleric of Sune/Divine Oracle/Saint
Human Swordmage/Coronal Guard/Sage of Ages (Might change to Radiant One)

Likely having the following characters eventually make it to Epic: Tiefling "Human" Bard(MC Swordmage/Wizard/Warlock/Sorcerer)/Resourceful Magician/Sage of the Ages
I have two characters that are likely picking from the same pool, though different weighting on which ones are more important based on personality: Half-Elf Paladin(MC Bard)/Lifesinger and Half-Elf Fighter|Paladin(MC Bard)/Daring Blade Feyliege Legendary Captain Draconic Incarnation Reincarnate Champion

Optimization-wise, it is very, very tough to beat the +2 to two stats of Demigod/Chosen.
Also, Divine Regeneration is fantastic.
That said, some of the highly focused Epic Destinies can be good choices for certain PCs.
And of course if you're choosing an E.D. for role-playing reasons, then you don't give a crap about how good Demigod/Chosen might be vs. whatever you're choosing.

I have two characters who may see the light of epic. My paladin heartwarder, Serendipity, will become an Exalted Angel. Reyes, my eladrin tactical warlord spiral tactician, is looking at Warmaster.

Yeah, I agree. I'd personally much rather have an interesting/unique character than an uber-optimized but boring one. I generally view it as a failure in character design if other people have carbon copies of my character.
For example, I was absolutely horrified when I pulled out my shiny new elven ranger and DaveK, before he had seen the character in action or knew anything about her at all, was able to recite to me my entire character sheet - stats, powers, feats, skills, home region, items, my character's preferences for long walks on the beach - everything. This was back in the very early days of 4e when I didn't know elven archer rangers was a popular build. Sure, my ranger did a lot of damage, but she was boring as heck and I saw clones of her all over the place. So I rebuilt her, got her a bear friend, and have been greatly enjoying my not-super-optimized but unique and fun-to-play ranger. (Although yes, I still have Twin Strike and my Fighter still has Come and Get It.)
I know other people's playstyles differ, and that's cool, but I'd personally rather have any other Epic Destiny than boring ol' +2 to two stats.

One Draconic Incarnation Dragonborn Paladin, because the ED is solid and it fits very well
Now I just need to find an ED for an utterly imoral (yet not quite evil) self deluding fast talking halfling chaos sorcerer with an incurable mercantile bend... You'd think its almost an archetype, but I cant find one that fits... Maybe he should find a dead god to worship...

Actually, I don't think Demigod is really considered a top-tier ED any longer. It is certainly very strong, but two things happened: They errata'd the 30th level power with a big nerf bat.
Lots of other EDs get the +2 to two stats or get big abilities and a +2 to one stat which is often more important. Not necessarily any of your choice, but there's usually an ED for everyone.

My Warforged Fighter learned at level 4 that:
A. Some of the Gods used to be mortal and B. The God of Protection is dead (actually he learned that at level 8)
As a result he has been telling people that he is the Demigod of Protection since level 8 (he told people he was the Demigod of Magic before that...which was kinda tough since he didn't know anything about magic).
Thus....regardless of how good or bad it is....he is destined for Demigodhood.
Warforged fighter (multiclass cleric)/ Warpriest / Demigod
(an interesting side note....gaining followers as a fledgling "deity" is much harder than one would think)
