Aren't the Agasha pacifistic shugenja? And the Utaku are great, but very little dueling happens on the back of a horse. My problem is, I can't come up with a duelist from another clan that could reliably take even a beginner Kakita at less then Insight 4. What would a duelist build from another clan look like? (Aside from Dragon, who build almost exaclty like a Crane)

It really depends. In the flavor, they are very good. Their quality average is much higher than the other clans. But even if the best of the best duelists use to be Crane, the top duelists of many clans can challenge than. Remember that the dragon are very good at dueling too, and both Scorpion and Phoenix have regular Iajutsu training. So, the crane are feared in this area, but can be beaten. Now if you look ate the mechanics, there are at least 10 vey weird schools, all outside of the crane/dragon, that are VERY good at dueling. Monkey, Utaku, Agasha, Shosuro.... The crane mechanics are very suboptimal for dueling ^^

So here's a question, what would a iajutsu duelist from a clan OTHER then the Crane look like? If the Kakita are really that unbeatable, why would anyone else bother to duel?
