My comment disappeared, but I wanted to restate that the "Building Character" tables are one of the finest set of tables I have seen. They have inspired me to write long and intricate backgrounds, even linking them together into a story. Thank you!

I did overlook the feat Internalize the Basic Kata, which does change MBAs to Dexterity, but only with the unarmed strike. There are still a large number of benefits that make wielding a club and dagger (or other weapons, for some purposes) a superior option, and you can't make an unarmed strike if your hands are full. There is also still the issue that monks are meant to be multi-attackers, and MBAs don't help a monk do what he/she's supposed to be doing best. There will obviously be instances...

I'm not terribly familiar with oriental weaponry, but if the katana is the relatively long bladed sword that I'm thinking it is, then it would probably be comparable to the bastard sword. You can wield it in one hand at a pinch, but you get better control with it if you're using 2 hands. (That's more of a real-life comparison, not meant to reflect D&D mechanics.)
