Hey lady's & jet's my question is, is it possible to make a golem completely out of adimantium head to toe? If so would what would his AC be?

Yes.
Whatever it ought to be for the level and role of the monster.
I'd probably look at an Iron Golem and reflavour it.

Yup. In 3.5e, the Adamantine Golem had AC 37 and Damage Resistance 20.
