One of my players wants to play a tinkerer dwarf character who will invent stuff like bombs, mechanical armors and weapons and will be carrying thief skills 'pick locks' and 'disarm traps'. I think there is no official class or class kit like this so we are trying to create the character class ourselves. Do you have any recommendation about how he will develop his skills in his thieving abilities or how will it be ruled when he wants to invent something new? (like a sword with mercury inside which changes its center of gravity so it is slower or harder to hit but gives bonus damage when you hit)

Have you looked in the Dragonlance books? There they have Tinker Gnomes that sound a lot like the character you are trying to create. I definitely know that one of the 1st-edition AD&D Dragonlance books had a class has what you are looking for although I can't speak for how good or balanced it would be.
