My party told me they really wanted to play some adventures in Sigil, City of Doors. Now I've checked the Planescape page on Wikipedia and it lists 12 adventures. The question is simple: which ones do you recommend? We're looking to explore Sigil first, but we're not against visiting other planes in the future.

If you want to keep it in Sigil, try the following:
Faction War (5th to 9th level; takes place 90% of the time in Sigil) The Great Modron March is a classic, too, and has adventures for 1st to 10th levels. The Eternal Boundary is good, also, and is for levels 1 to 5. It takes place within Sigil.

Faction War seems a bit weird to start out with, considering it totally changed the social face of Sigil and all. But Eternal Boundary and Great Modron March are definitely on the list, as is that madhouse adventure which sounds awesome.
