The compendium unfortunately is missing the details on the creatures summoned by many items, but the skeletal warrior can be found under familiars and companions

That being said, the item description states you use your statistics when the skeletal warrior makes a check (ex: Athletics check), but says nothing about your stats applying to its attack and defense.  So unless the creature stat block says something like AC = summoners AC+2, it just stays flat and does not scale.  The same goes for any attack rolls which are just flat numbers like +17 vs AC.
 The skeletal warrior has static defense and attack numbers and will not automatically scale. Pretty much no summoned creatures scale as you increase in level.
