Hey, I have a quick question. I know I've seen this in a book before, but I can not recall which one it is. What is the hardness of a person's bone. For example if I wanted to sunder somebody's body.

The Arms and Equipment Guide places the hardness of bone at 6 (which I only remember because I used it for the euralden eye's bone statues). The AEG is 3.0 material, but I don't remember the statistics for bone being specifically repeated or contradicted in any later source, and it should hold true for 3.5 rules.
While you can't generally sunder creatures before killing them, their bodies would be able to be sundered once they were a corpse (since then they're just objects), keeping in mind that they've also generally got flesh on them through which you'd have to hack.

Zauber's Mutable Rod: This rod has a number of useful functions that make it easier to live in the wilderness. It is made of polished wood, with five studlike buttons on one end. Each button produces a different effect when pressed. Unless otherwise noted, the rod’s functions have no limit on the number of times they can be employed. • When button 1 is pressed, one end of the rod produces a small flame, equivalent to a candle. • When button 2 is pressed, the rod unfolds into a two-person tent, complete with bedrolls and warm blankets. • When button 3 is pressed, the rod becomes a one-handed hammer, suitable for pounding pitons into a wall. • When button 4 is pressed, the rod becomes a sturdy iron spade. • When button 5 is pressed, the rod becomes a wooden bucket able to hold 2 gallons of liquid. Once per day, it can be commanded to fill with fresh water. If the rod is seriously damaged or broken in any of its alternate forms (button 2, 3, 4, or 5), it reverts to its basic rod form and cannot be activated for 24 hours. Moderate conjuration; CL 9th; Craft Rod, minor creation; Price 375 gp; Weight 2 lb.

Yeah, I just want to smash the dead bodies with my Great horn minotaur hammer lol. Thanks, would have never of thought to look through that for hardness of bones.

The answer is on p. 144 of the 3.5 DMG under the Stone Age. I'd save you the trouble but I don't know if it's OGL/C.

Well noted! I tend to forget about that Stone Age section while getting distracted by the kusari-gama. And it looks like the figures for hardness and hit points didn't change at all between the two.

6 makes decent enough sense, since wood is 5 and stone 8.

This reminds me - are there rules for sundering or severing limbs?

Page 27 of the DMG has variant rules for damage to specific body areas, but it's otherwise mostly limited to specific effects, like vorpal weapons, or the ability to chop off a hydras heads, or a kraken's tentacles (both of which are traits of the monsters in question).
The broadest one that comes to mind is the Disintegration Finesse feat (from Lords of Madness), which allows you to selectively destroy things when using disintegrate effects, with no limitation on how specific you can be, but it doesn't provide any guidance for the results other than to point you towards the aforementioned variant rule in the DMG.
