Hey guys I wanted to know if there is anyway I can carry a two handed weapon in each hand and if I can have more then one holy symbol?
If you have any idea on how I can hold a two handed weapon in one handed please do share.

Eternal Defender ED allows you to one-hand two-handers.

You can carry a 2-handed weapon in one hand, but you can't attack with it (barring special abilities that let you do it).
And yeah, you can have more than one symbol, though you can attack only with one at time, of course. I don't know if this has been clarified in a recent errata or FAQ, though.
