Which do you play with/prefer? Why? And what has been your experience of magic items/inherent bonuses? I can't make my mind up which is better. On paper I'm drawn to inherent bonuses, but ... I just don't know.

I prefer Inherent Bonuses with fewer magic items; essentially, the items become more useful for their properties/abilities than plusses, in the case of the weapon/armor/neck slot items.
Inherent Bonuses also work better for me as a matter of pacing; I usually only have two or three fights before the PCs level up, so it can sometimes be hard to drop an entire treasure parcel. It also makes it easier to play characters who are not motivated by wealth, in my experience.
Another day, another three or four entries to my Ignore List.

I like magic items for their abilities and properties.
The +1 attack is like an extra bonus to getting to do something cool with the weapon.
I've only play LFR so far, so I guess I don't know how to compare it.

To each his own, but only 2 or 3 fights between levels? Do those characters also do a bunch of non-combat encounters that earn them xp? Unless I was running a particularly long session, (say 6+ hours), I wouldn't dream of having a character level more than once in that time.
I prefer to give out non-permanent bonuses or items, like potions, scrolls, temporary buffs, etc. I'm fairly stingy with permanent magic items.

I kind of wish I'd have used inherent bonuses and a lot fewer magic items in my home game. The amount of options the party of 10th level PC's has now is really leading to turn bloat.

I don't track XP.

I don't track XP.
And what about my other questions? Do you just automatically grant a new level after 2 or 3 fights?

More like two or three sessions (we have encounterless sessions fairly often). Depends on if it's dramatically appropriate, if I think the players understand their new abilities before they gain new ones, generally fits the pacing, if everybody thinks it's a good time, and so on and so forth.

I use magic items.
Thematically I prefer it. It feels more rewarding that static bonuses.
If I was in an inherent bonus campaign i would be fine with it. Just maybe, with fewer combat options, a player could devote more concentration to role playing. My party artificer would be a little bummed though.

my group uses inherent bonuses, with each character getting one magic item per tier, with little focus on cash at all. It works out really well, we focus on the plot of the story.
