however it is very annoying to constantly have to look up in the book whenever the druid summons something for the stats of the monster the druid summoned. They are all over the book. Is there not a reference that contains all of them in one single file that I could print out for example ? Just seems un-organized that there would not be such a thing...
That is an issue with summon spells in general, but there are a few ways to make it easier on yourself.
I suggest that your player makes a list of page number references for her favorite summons and keep her MM handy. She doesn't need page numbers for all of them sense the main use of summon spells is combat support, and many summons are redundant in that regard. For example, you'll likely rarely, if ever, use Summon Nature's Ally to summon anything other than snakes or wolves.
In fact, I'll strongly suggest that she limits herself to a few favorites. At least until she becomes more familiar with her options and gained some more system mastery.
For a less bulky reference, she could edit print her own pocket reference from the official SRD files. And to make it easier to fit, many parts of the creature entries can be omitted since they have no barring on how the summon creature performs when summoned, including, but not limited to, alignment, organization, treasure, advancement, level adjustment, ability scores, and environment. And again, limiting this list to a few favorites would go a long way to speeding up your game.

Yeah looks like editing is the best solution and limiting to maybe 2 - 3 summons per level of the spell is the best way to go. I am just surprised that nothing official or fan made is readily available.

There was a 3e character sheets package that included all the SRD summons for the classes that had them, but considering that I think it was on the shelves five years ago, that probably doesn't help you much.
Another day, another three or four entries to my Ignore List.

Someone might still have a pdf file of it though. There's a website called "replacementdocs.com" or if that doesnt work google the individual words. If you buy a used game or lost an old manual they often them. Stands to reason someone might have put some character sheet pdf's there. I think there might be a part of the wizards site that still has 3.5 character sheets and maybe they have that one too.
