Technically, cavaliers don't begin from Upper Middle Class; Horsemen do. Horsemen have -1500 xp; when they reach 0, they become cavaliers.
They start with 20-80gp, chain mail, sword (broad or long), lance and light warhorse.
This would be found in the Unearthed Arcana, p25.

I thought my last one was a little sneaky, so we'll make this one a little easier.
What do the first edition rulebooks say is tucked away on the highest plane of the Seven Heavens (Chronias)? Okay, I've flicked through my Manual of the Planes with very little success. I don't know about 'tucked away' but it is believed that the greatest power of Law resides here and that any other realm is endured for mortals.
Am I close?

That'll work fine. I don't have my copy in front of me, but it says something about the greatest of all archons (angels) being there. The one worshipped by a number of prime material religions.
I always took this to be their representation of the Christian/Jewish/Muslim deity without spelling it out precisely.
I referred to it as tucked away, because they don't refer to this being in any other sourcebook.

As per the "Dungeoneer's Survival Guide", page #71: The Swiss Cheese Theory According to this theory, the world is fundamentally solid with no massive hollow space at its core, but enough caves, caverns, and artificial passageways exist to allow an individual to travel anywhere under the world.
Would that be what you're looking for?
