I don't remember seeing anything that says you couldn't but effects may be hindered or even impossible due to dogfighting.

I remember that once in a dogfight your actions are limited, such as 'disengage' from the dogfight. I haven't seen anything that says I couldn't use snap roll, for example, or any of the maneauvers where you can do extra damage as a reaction.

The only limitations I can see from reading the description of dogfighting is:
1. You can’t move from your current square,
2. You can’t attack any target outside the dogfight.
3. You must select the dogfight action every turn (opposed Pilot check, standard action) unless you disengage.
As long as you respect these limitations, I don’t see why you can’t use Snap Roll or other maneuvers that don’t require a standard action.
