For example, would I be able to tap Tormod's Crypt in response to my opponent playing Immortal Servitude even though it isn't my turn?

activated abilities are generally "instant timing" (don't use "speed", there are no speeds in Magic), unless stated otherwise

you can activate Tormod's Crypt whenever you have priority

Yes, activated abilities can be used any time you could cast an instant (unless the ability explicitly says otherwise )

Note that some abilities have built in timing restrictions that you might not see on the cards themselves. For example, the Equip ability can only be used during one of your own main phases while the stack is empty and you have priority. Planeswalker Loyalty abilities have the same timing restriction, and each planeswalker can also only use one per turn (even though this isnt stated on the cards).

That makes no sense to me.

If they spelled the ability out on the card in full then it would not be allowed in a mono-black Commander deck, but because they used a keyword to save space it is allowed?

Yup, just like you can have Birds of paradise in a mono green deck but not Noble Hierarch . YAY COLOR IDENTITY

I love this description. Like the cows are sponges filled with milk. I can see it all Nick Parks claymation-style with the cow's eyes bugging out momentarily as a giant farmer squeezes it like a squeaky dog toy, and milk shoots out of it.
