If I sac Torch Fiend can I put a +1 +1 on Havengul Vampire ?

Yes.

To "die" means to move from the battlefield to the graveyard. Dying can happen in many ways, but one of them is by being sacrificed.

sacrifice often leads to "dying"
but if your opponent controls Leyline of the Void for example your sacrificed creatures won't "die"

Yes, under normal circumstances.  As stated above, die means 'move from battlefield to graveyard'.  If something like Rest in Peace is in play, and as a result a sacrificed creature is NOT placed in the graveyard, then the sacrifice will still have happened, but a 'death' will not have happened.

You can sac Torch Fiend if there's an artifact in play to target. If there are no legal targets for its ability, you can't activate the ability.
