How much damage does attacking creature deal to player? 0, 1, or 2?

Glissa deals 2 damage to the defending player. (I assumed from your original question that you had simply given her trample in some manner  ) 1 damage is lethal because Glissa has deathtouch. The rest of the damage is carried over to the defending player. Since the blocker has protection, the one damage assigned to it will be prevented and deathtouch will not apply.

The black creature needs only to assign 1 damage to the blocker, due to deathtouch, the remaing 2 can be assigned to the player.

Note that if the attacking player wanted to, his creature could deal less than 2 damage to the defending player (either 1 damage or no damage at all).

That makes no sense to me.
If they spelled the ability out on the card in full then it would not be allowed in a mono-black Commander deck, but because they used a keyword to save space it is allowed?

Yup, just like you can have Birds of paradise in a mono green deck but not Noble Hierarch . YAY COLOR IDENTITY
