i have a champion of the parish and another cards on the field, my opponent casts traitorous blood and takes the other creature, it attacks, and then i get it back. does champion of the parish gain a +1/+1 token when i get the card back for "entering the battlefield"? or is that not considered entering the battlefield?

No counter. It is still on the battlefield and never left.

No, it doesn't count as entering the battlefield in that case. There is one battlefield, which is a zone shared by all players in the game. When your Champion of the Parish changes controllers, it never leaves the battlefield, so it can't possibly be entering the battlefield, either.
