Can Countersquall  be used to avoid Grove of the Guardian  from creating the 2 8/8 creatures? If yes, what would happen then?, does it still go to the graveyard, the mana is used and 2 creatures get tapped?

No. Grove of the Guardian has an activated ability, which is never considered a spell.

Lands aren't spells. Ever. Grove makes an 8/8 through an activated ability. You need Stifle  or Voidslime  or something like that to couner it. EDIT: Just noticed this. Grove does not make two creatures. It makes one creature that is both green and white, just like Risen Sanctuary  .
