If I cast an unholy strenth on my bear and the bear leaves play before the spell is completed,
 is the spell negated
or can the aura come into play and then attach to some different creature ?

TLDR

Aura spells target
if the Aura enters the battlefield without being cast, it does not target

if an Aura spell is countered (such as in this case for having no legal targets) the Aura goes to the graveyard, just like any other spell

yes, it's countered because its only target is nonexistant

nope

303.4a An Aura spell requires a target, which is defined by its enchant ability.

608.2b If the spell or ability specifies targets, it checks whether the targets are still legal. A target that’s no longer in the zone it was in when it was targeted is illegal. Other changes to the game state may cause a target to no longer be legal; for example, its characteristics may have changed or an effect may have changed the text of the spell. If the source of an ability has left the zone it was in, its last known information is used during this process. The spell or ability is countered if all its targets, for every instance of the word “target,” are now illegal. If the spell or ability is not countered, it will resolve normally. However, if any of its targets are illegal, the part of the spell or ability’s effect for which it is an illegal target can’t perform any actions on that target, make another object or player perform any actions on that target, or make that target perform any actions. The effect may still determine information about illegal targets, though, and other parts of the effect for which those targets are not illegal may still affect them.

701.5a To counter a spell or ability means to cancel it, removing it from the stack. It doesn’t resolve and none of its effects occur. A countered spell is put into its owner’s graveyard.

note: the same can't always be said for non-aura enchantments like Oblivion Ring where its caster can change the target announced for the EtB trigger if he announced it as the spell is cast and if an opponent responds to the spell (as opposed to the trigger).
eg. I drop Oblivion Ring tapping 3 Plains and say "targeting Creature X"
if you respond by saying "in response to your spell, I Unsummon Creature X", I can change the target to another nonland permanent.
However, if you said "in response to Ring's trigger, I Unsummon Creature X", then I can't change the target.

You do have time to change the target, using something like Swerve , in response to whatever it was that killed the bear.

That makes no sense to me.

If they spelled the ability out on the card in full then it would not be allowed in a mono-black Commander deck, but because they used a keyword to save space it is allowed?

Yup, just like you can have Birds of paradise in a mono green deck but not Noble Hierarch . YAY COLOR IDENTITY

I love this description. Like the cows are sponges filled with milk. I can see it all Nick Parks claymation-style with the cow's eyes bugging out momentarily as a giant farmer squeezes it like a squeaky dog toy, and milk shoots out of it.
