So if players are Planeswalkers, and Planeswalkers are permanents, can I Mindslaver an opponent and then sacrifice them to Barrin, Master Wizard ?

players are not permanents

Players are not planeswalkers.

They aren't. At least, not as far as the rules are concerned.
