If my oppenent plays a Thragtusk and I counter with an Essence Backlash , would it be correct that they never get the 5 life from him and they would take 5 damage becase of my counter, and they also would not get the 3/3 token? All this because the tusk was never actually allowed to resolve correct?

Correct. It would move from the stack to the graveyard. Since it was never on the battlefield, neither ability will trigger.
The Thragtusk spell was countered, therefore it never entered the battlefield (never became a permanent), it went from the stack (where spells exists) to the graveyeard. So Thragtusk's two abilities didn't trigger.
And of course, your opponent is dealt 5 damage from Essence Backlash. This part doesn't even care if the creature was actually countered or not (even if the creature spell was Loxodon Smither or cast with Cavern of Souls 's mana, the creature isn't countered but Essence Backlash's damage is still dealt).
Note that if something triggers when a spell is cast (rather than when a permanent "enters the battlefield"), then countering the spell wont stop the trigger (in fact, the trigger condition has already been met, and the triggered ability itself will already be on the stack before you can respond with your counter).
For example, if your opponent had a Wurm's Tooth and cast Thragtusk, he would gain 1 life even if you countered it. Replace Wurm's Tooth with Soul WardenEssence Warden and he would not gain life.
