I have an exalted deck I'm trying to work on at the moment, and I want to know that if I were to attack an opponent with one creature (say a 2/2 to begin with), and with the addition of exalted which makes it a 7/7 for example, if I used Soul's Grace after declaring my attack phase, would I be able to gain life to the amount of 7, or just two (the creature's original power/toughness?

That works. Soul's Grace only cares about the current power.

If you cast it after all the exalted triggers resolve you will get 7.
