I was wondering what would happen if an opponent activiated Soul Ransom and I activiated my Undercity Informer in response? Do I still get to draw 2 cards even though I didn't sacrifice a creature for Soul Ransom 's ability?

Soul Ransom does not make you sacrifice a creature, it makes you sacrifice Soul Ransom itself (but you still draw 2)
Opponent will activate this ability in order to get back the creature.

Soul Ransom does not make you sacrifice a creature, it makes you sacrifice Soul Ransom itself (but you still draw 2)
Opponent will activate this ability in order to get back the creature.

on a related note, if your opponent activated Soul Ransom and you, in response, sacrifices Soul Ransom to Auratog , you would still get to draw two cards, correct? Since Soul Ransom's ability actually has two effects, separated by a comma, which would do as much as is possible when it resolves? Edit: Wait, sacrificing it before the ability resolved would prevent it from resolving wouldn't it?

you got it right before the edit sacrificing the creature or the aura will not stop you from drawing 2 cards (both will stop you from being able to sacrifice the aura (again), but that is not relevant)

Correct. The sacrifice instruction is impossible, so you ignore it, and move on to the second instruction which is to draw 2 cards. The card drawing isn't contingent on the sacrifice, so it happens just fine.
Edit: Wait, sacrificing it before the ability resolved would prevent it from resolving wouldn't it? Nope. Once an ability has been activated, it exists independently of its source. Getting rid of the source of the ability does not counter that ability.

This tid bit of sacrificing the stolen creature in response and still getting the card draw is what changed my mind about putting this in my Lazav Mill EDH deck. Mainly because of Altar of Dementia being the deck as well. I can just picture it now: I cast Soul Ransom taking their biggest threat, (idealy) swing back at them at least once (maybe even with an spell encoded on it  ), then when stolen creature's owner tries to get their guy back, I'll sac it to Altar of Dementia in response ending with then discarding 2 cards, milling a decent amount of cards, and me drawing 2 cards

A canny opponent wouldn't attempt to activate Soul Ransom's ability if you had Altar of Dementia in play, so you may not want to count on drawing those two cards. Think of including Altar's Reap or Launch Party instead as well; your opponent may not see that coming.

While I agree about a canny opponent not falling for such obvious shenanigans and thus needing something like what you suggest; I also like playing with repeatable/consistent sac outlets like the altars in EDH instead of "wasting" x card slots for the same purpose and thus taking up space I need for more key cards. Also, there is Leyline of Anticipation in my Lazav deck just for such a surprise tactic.
