Yes. The Fiend Hunter is human, so it is not non-human.

Fiend Hunter is a human. As such, Spare from Evil won't interact with its abilities at all - Spare from Evil grants protections from non-humans (such as Olivia Voldaren ). Now, if it were protection from white... say, as granted by an Apostle's Blessing - then casting that on the creature Fiend Hunter targets will save that creature from being exiled, as targets are checked for legality when the ability goes to resolve, and a target with protection from white is an illegal target for an ability from a white source.

Yes it will. When the creature comes back it is a new object, not the same on targeted, so the the Fiend Hunter's ability will fizzle.

but if you blink it in response to his Fiend Hunter spell, it'll have no effect

With blink, the target disappears and that counters the targeting effect, even if it comes back into play before the last effect resolves?
