Okay, I have a couple questions about card interaction that I'd like to ask:
1: If I use sunforger to find and cast hide // seek can I cast both sides of it.
2: If I cast a spell like electrolyze on ink-treader nephilim targeting only it, can I have that copies target more than one target, I mean can I have it deal just one to the creature and one to my opponent.

You can cast whichever side you prefer, but not both.

No. The copies will only be targetting a single thing (the corresponding creature).
