when i chose a target creature for the volcanic hammer can the defendent chose not to take the damage on the creature and take it himself as the player instead?

No.
To do that, your opponent will need something like Jade Monolith .

No, the opponent has no say in the matter. Of course, there are cards, that can give him that choice.
I'm a Rules Advisor now  "Simple questions" usually need rather complex answers, while complex questions often come down to no more than a simple "yes" or "no". Some of my favorite Flavor texts:

For something like that to be possible, Volcanic Hammer would need to be worded in a manner similar to Blazing Salvo . It's not, so your opponent can't do that.
