Here's a thought...if my opponent hits me with this guy and exiles a card, can I then cast my own nightveil specter and play the card my opponent exiled?

No
Why not?
When a creature has its name in its card text, it is referring to itself exclusively, as well as that specific "iteration" of the card (if Nightveil Specter were to exile two cards and then get Cloudshifted it would no longer allow you to play the cards in exile because the game treats it as a new card).
A wise man on film sequels:
Watching sequels to really good films is like visiting a bollock kicking parlour, paying your money and then proceeding to get your bollocks kicked...then leaving and returning at a later date to repeat the process.

PM me to make it happen. Your username will end up here, as the cards you sent me. I reserve the right to order your usernames by the cards I liked the best.
Oh, and if you send me some Islands in the package, I'll sign them and mail them back.
As a casual FNM player, I definitely love the fun part that this card brings to the table, but in a best of 3 there's quite some potential in skimming through your opponents library faster than normally to get an idea of what he's actually playing.
