I have 2/1 flier trying to attack my opponent who has Lightmine Field  out. Will my creature die first, before the damage gets through or does the damage still hit him then my flier dies?

Your creature will be destroyed in the declare attackers step. That's long before it would get a chance to deal combat damage.

it's before damage is dealt and even before blockers are declared

Your creature will die when you declare attackers, which will take place before damage resolution for that combat phase.
So, your flyer will die and your opponent will take no damage from him
