If one of my creatures is exiled does it count being under my control for the power and toughness of Crusader of Odric ?

No, creatures only exist on the battlefield.  In exile it is a creature card.

"creatures" is short for "creature permanents", which means "creature cards/tokens on the battlefield". A creature card/token in exile is not a creature.
