Drop of Honey
triggers at the beginning of your upkeep, but does not target. Can I put the trigger from Drop of Honey on the stack, and then tap my
Vhati il-Dal
to make a creature have a power of 1 and kill it with the Drop of Honey, assuming no creatures on the board have power less than 1?

sure
Thanks!
Also, it is because it does not target, correct? Otherwise I would have to pick the target when it triggered, right?

Yes, that's right. For example, when Crumbling Ashes
triggers you must choose a creature that already have a -1/-1 counter, you can't use something to give it a -1/-1 in response to the trigger.
