I know I can't split the damage from a single source, but can I have the damage from the chancellor go to one Palisade giant and the damage from the Rakish Heir and the Falkenrath Noble go to the other Palisade Giant (assuming I don't block)?

If you control more than one Palisade Giant, you choose which redirection effect to apply. You can’t divide damage dealt by one source. For example, if an attacking creature would deal 8 damage to you and you control two Palisade Giants, you may have that damage dealt to either of the Palisade Giants. You can’t have 4 damage dealt to each Giant or choose to have the 8 damage dealt to you.
Compare "All damage a source would deal" and "All damage that would be dealt".
You can split damage by source for the former wording, but not for the latter wording. The Palisade Giant and Pariah uses the latter.
I can't find an example of the former wording used by replacement effects, but both wordings are used for triggered abilities: Dromad Purebred and Michiko Konda, Truth Seeker ,
Palisade Giant cares about recipients of damage, not about sources of damage. So if two sources are trying to deal damage to you at the same time, all the damage will be redirected to a single giant at the same time. But if a single source tries to do damage to two different objects or players at the same time, the giants treat each chunk of damage independently.
