Background question: Are instant and sorcery cards put into the graveyard as they are being cast? Real question: Can a player tap his Deathrite shaman in response to that deathrite shaman being targeted by a searing spear , targeting the same searing spear (that is theoretically already in the graveyard), to squeeze in 2 damage before dying?

No. They go into the graveyard as the last step of resolving. Before that they are on the stack.
