If I cast cloud shift on Archdemon of Greed would it remain Archdemon of Greed?

No. It will become a new object with no memory of previous existence. It will become Ravenous demon

Permanents enter the battlefield untapped, front-face up, and unflipped, unless some effect says otherwise ( golgari guildgate enters tapped because it says so itself, Homura, Human Ascendant / Loyal Cathar return flipped/transformed for their own abilities but not from other effects). This is true for any form of coming to the battlefield from any other zone. So Cloudshift-like effects should say it enters transformed. As it doesn't say so, the demon returns untransformed.

So playing cloud shift on Archdemon of Greed in the second main phase would bring return ravenous demon to the battlefield.

Using Cloudshift during any phase or step will give you that result, which of course includes your post-combat main phase.
