I think I like Seller over Growth here seeing as it's never a dead card. Fliers are good, fliers plus chumps seems playable in this deck.

I'm going to go with Sundering Growth . Seller is filler I guess, but I'd much rather have the stronger sideboard option. I'm more scared of the potential enchantments and artifacts combined than the early aggression that Seller might be able to diffuse. I see the argument for Seller though, being able to get a birdy is nice.

As people have said, there are many good naturalize targets. Being able to get rid of a stab wound, arrest, paralyzing grasp, martial law, growing ranks, +3/+3 glorious anthem, and so on seems really good. Potentially getting a centuar at the same time upgrades from good to awesome. It also kills keyrunes.
Sundering Growth and it's not close. That being said, the Steed looks like an interesting card. I didn't play with or against it at the prerelease, but being able to muck around with combat might be fun, even if it is a little overpriced.

Occassionally when catering, I've been put the task of arranging Fruit and Cheese or Grilled Vegetable platters. More than once a high class buffet has started with the mark of Phyrexia upon it. Since i've got a good eye for color so it looks great to people who don't get the "joke" (it's a niceley divided circle after all: the outline gives you 4-6 "regions" to work with), this has actually got me put on platter design more often, resulting in Phyrexia's presence at more private and industry events.
