Okay, so, Grimgrin, Corpse-born . His ability to sac a creature. Does he HAVE to be tapped to use it?

No need to be tapped. You just ignore the 'untap' part if it's already untapped, the rest still applies.

If the ability required Grimgrin to be tapped, it would say so. Ability usage restrictions always begin with "Activate this ability only..." and always appear at the end of the ability's text.

Or it could include the untap symbol () in the activation cost.
