If I were to have a creature such as Avatar of Woe equiped with an item that made it pro green (sword of feast and famine for example) and the Avatar's ability was activated and added to the stack could that ability be countered by a green card such as Bind? So does the pro green expand from the creature to the ability as the ability is added to the stack?

No, Protection is an ability that only affects permanents. It cannot affect spells or abilities. It will only protect the permanent that has Protection.

Non sequitur. Even if the ability did have a colour, it still could be stopped with Bind. The ability (a) doesn't have Protection from Green (a statement that's both more relevant, and directly answers the OP's question), and (b) is on the stack, not the battlefield, so even if it did have Protection, it wouldn't matter.

Protection also can protect players . The reason it doesn't protect the ability is because the ability doesn't have protection, just the source of it.

Protection also only works on objects on the battlefield and players. If you could somehow give an ability protection, it would do nothing.

To summarize: No. Nothing is giving protection to the ability. In fact, nothing currently existing can give protection to an ability. Even if it somehow gained protection, protection only protects permanents and players.
