opponent casts mind control on a creature of mine i, in response sac the creature he targets there are other legal targets on the field does mind control (sorry to use this word i know how much you guys hate it) "fizzle" or does it find a new legal target?

Mind Control fizzles. Its only target is no longer legal, so it's countered on resolution and goes to its owner's graveyard without doing anything. If you have already chosen targets for something, you never get to choose new targets just because the target you chose is no longer convenient.

It should go without saying, but please keep in mind that you cannot just sacrifice a permanent whenever you want. You must have a reason to sacrifice, which will usually be as a cost of a spell or ability. I only say this because your initial question doesn't mention why you're sacrificing, which leads me to believe that you might be sacrificing your creature only to avoid the Mind Control , which isn't possible. Now, if you had a creature on the battlefield like Bloodthrone Vampire , or an enchantment like Greater Good , then you'd certainly be able to sacrifice a creature to one of those abilities.
