I can't find an answer that directs me on this one (perhaps I'm not reading right), but here goes:

Jund is the plane in play.

My opponent has Illusory Angel in play, and casts Maelstrom Wanderer.

I assume the cascade effect triggers when the spell is cast, before Wanderer resolves into a creature. The cascade effect brings Enigma Sphynx and Fiery Fall into play. Enigma Sphynx's cascade effect brings another creature into play (can't remember which one; not critical).

Maelstrom Wanderer and Enigma Sphynx resolve into creatures, and Fiery Fall resolves.

Fiery Fall does its 5 damage, and my opponent sacrifices Enigma Sphynx and Illusory Angel to the Jund devour effect. He leaves the other creature in play, because we're already confused enough!

Because Maelstrom Wanderer is a single creature, even thought it's both black and red, I assume it gets 10 +1/+1 tokens (5 for each creature sacrificed), rather than 20 +1/+1 tokens (5 per creature sac'd per color of the spell). Now he has a 17/15 Wanderer and another creature, both with haste.

Am I even close on any of this? It may or may not have affected the outcome of the game.

Yeah, that's about right.

Your opponent casts Maelstrom Wanderer , which causes three abilities to trigger: cascade #1, cascade #2, and Jund . He can put the abilities on the stack in whatever order he wants, but it's not going to make a big difference, so i'll asume he puts cascade on the stack, then cascade, then jund on top. At this point, the stack looks like this:
  • Jund
  • Cascade
  • Cascade
  • Maelstrom Wanderer

Jund's ability resolves, and gives maelstrom wanderer Devour 5. As you pointed out, the fact that it matches multiple of the colors doesn't give it Devour 10 -- it just gets devour 5. Next, cascade resolves, and he flips into Enigma Sphinx . The sphinx gets cast, which triggers another cascade and another jund. Again your opponent gets to choose their order, but since i'm the one answering the question, i'm gonna pick for him -- muahaha. He puts cascade on the stack first and jund on top. The stack now looks like this:
  • Jund
  • Cascade (from sphinx)
  • Enigma Sphinx
  • Cascade (from maelstrom wanderer)
  • Maelstrom Wanderer 

Jund's ability resolves and gives the sphinx devour 5. Cascade resolves and flips into fiery fall. Fiery fall gets cast. Fiery fall deals 5 damage. Enigma sphinx resolves and enters the battlefield. As it does so, its controller may sacrifice creatures to put +1/+1 counters on it (it has devour 5 remember), but chooses not to. Next, Cascade from maelstrom wanderer resolves and reveals, say, Pearled Unicorn . The unicorn gets cast. Next, the unicorn resolves and enters the battlefield. Next, Maelstrom Wanderer resolves, and as it enters the battlefield its controller sacrifices enigma sphinx and illusory Angel .
