So on the site, www.wizards.com/Magic/Magazine/Article.a..., it says this:

Constructed decks must contain a minimum of sixty cards. There is no maximum deck size; however, you must be able to shuffle your deck with no assistance. If a player wishes to use a sideboard, it must contain exactly fifteen cards.




In the Tournament Rules, it only says this:

6.1 Deck Construction Restrictions
Constructed decks must contain a minimum of sixty cards. There is no maximum deck size. If a player chooses to 
use a sideboard, it must contain exactly fifteen cards.




Why is there no mention of assistance there?

They got rid of the ableist restriction in the tournament rules but didn't update the site.

Assuming you check with the Head Judge and he or she gives you the go-ahead, yes.
