So lets say I have a Thelonite Hermit on the field, and I use the morph ability. Would my opponent be able to gain control of it with a ray of command as it's morphing and gain the tokens after the morphing resolves, or does the morphing have to resolve before anything else can be put on the stack?

Turning a creature face up cannot be responded to. By the time your opponent can respond, Thelonite Hermit 's triggered ability is on the stack, and you control that ability.

Turning a face down creature face up for its morph cost is a special action that a player can take whenever he has priority. It doesn't use the stack and cannot be responded to, though it might set off a trigger that does. It is not an activated ability, so it won't be affected by Suppression Field and can even be used in response to a split second spell .
I'm a Rules Advisor now  "Simple questions" usually need rather complex answers, while complex questions often come down to no more than a simple "yes" or "no". Some of my favorite Flavor texts:
