So, I was wondering: is it possible to have an herbivorous race aligned with or mana?

I mean, even gets ungulates like minotaurs, but and seem always carnivorous. I mean, I guess is parasitic, but still...

Nectar and nightmares.

Do nightmares count as predation?

Birds are often herbivores. Rabbits as well (upon which Moonfolk are based). Some species of turtle are also herbivores.

There are bats that eat fruit, but I don't think they show those on cards.

Black and blue have not have the best of luck with rabbits outside of the Moonfolk.
