Has anyone discussed this before? My favourite is  snow/ice magic. So natural, yet so exotic.

It's only exotic because Wizards used to portray cold things as either blue or green . Actually, cold was sorta green's thing for the longest time with stuff like Hail Storm , Ice Storm , Blizzard , etc. It wasn't until Kamigawa and a bit of Cold Snap did red start to take back part of its identity. I believe MaRo mentioned on his tumbler at some point that he wished cold spells had a better history of being in red due to their tie in with snowy mountain tops so that it didn't seem so disjointed when they made red cold spells.
You fell victim to one of the classic blunders - The most famous of which is "never get involved in an thread with GM_Champion" - but only slightly less well-known is this: "Never go in against AzureShade when card design is on the line!

To be fair, whenever a setting is united under a very specific hat, all five colors usually get to play around in that hat. In Coldsnap, all five colors had access to snow magic to varying degrees. Cover of Winter Skred Chill to the Bone uhhhhhh Into the North ?

Gravity is normally blue , due to it being matter warping space-time and something about the Higgs boson. A lot of flying hosers like Earthbind and Plummet put it in green or sometimes red. Another one, one I like more, is World at War . Normally time is also blue , but World at War is obviously time-related, but red.

Earthbind is too old to be relevant. Also look at it's name and art; nothing gravity about it, same with Plummet.

Why would that be red's flavor? I would expect that to be more white's thing in all honesty. (Playing up the whole stricter obedience/service thing. I feel it doesn't quite fit in black because black doesn't quite get the give and take nature of that sort of flavor.)

Actually, for Kamigawa, Red got alot of ice magic.
Glacial Ray being an example. Red is assocaited with mountains, and very tall mountains have ice. So Red does have acess to ice magic.
… and then, the squirrels came.

Kamigawa is the only non-Coldsnap example that I can think of that uses ice magic in red.
