If you cast a sorcery that deals 2 damage to a 3/5 and then in the combat phase that 3/5 blocks a 2/2, does it die or would it go back to being a 3/5 during the combat phase?

It will not die. It will have 4 damage on it. If you can deal one more damage to it before the end of the turn it will be destroyed.
Damage on a creature is only removed at the end of the turn.

Damage remains marked on a creature until the end of the turn. The damage from the sorcery and the damage from the blocking creature can combine to kill the creature.
However.... as you described it, there is only 4 damage being dealt to a creature with 5 toughness. That's not enough to kill it. Add one more damage, and yes, it will die.

First main phase I cast nothing. Combat phase a 5/5 blocks my 3/3. Second main phase I cast a sorcery to do 2 damage to the 5/5.
The 5/5 dies?

Yes. It will have 5 damage marked on it, which will be enough to destroy it.
