I have a Moldgraf Monstrosity exiled with a Mimic Vat and I activate it's ability to put out a moldegraf token. Then if it dies will I get my two creatures? The token would die and ability would trigger.... but wouldn't it be gone before it can be exiled?

it would be gone, but the ability is not dependant on successfully exiling. you will get your creatures.

note, however, that this will only happen if the monstrosity dies during the turn. mimic vat exiles the card, which does not trigger "dies" abilities.

120.6. Some effects replace card draws.
