Can I counter a creature coming back with unhallowed pact  with my geist snatch  ?

No; the creature is not being cast, so it's not a creature spell. The only spell being cast is the Unhallowed Pact.
Another day, another three or four entries to my Ignore List.

You would need something like Stifle  to counter that.

When enchanted creature dies, return that card to the battlefield under your control.This is a triggered ability. You would need something to counter abilities like Stifle or Voidslime
