Can i use Gideon's Lawkeeper to keep a creature from blocking one of my creatures after he declares blockers? Ex: i attack with a 5/5 creature, and he blocks only with a 6/6,( he also has a 3/3) can i tap the 6/6 to prevent it from blocking and allow my 5/5 to go through, without him being able to block it with his 3/3?

No. Once a creature is blocked, it remains blocked, no matter what happens to the blocker. You can tap the 6/6 prior to the Declare Blockers step so it can't block, but he's free to block with the 3/3.
Another day, another three or four entries to my Ignore List.

No.
If you wish to prevent a creature from blocking, you will need to tap it before it is declared as a blocker. The last chance to do so is in the Declare Attackers step.

Nope, you have to do that before he declares his attacks. Tapping an attacker won't remove it from combat.

You have to tap the creature before he attacks. If you wait until the creature is attacking, it is too late.

no, tapping or untapping doesn't change the status "attacking" or "blocking" once either is declared only cards that specifically state that they remove a creature remove a creature from combat

You probably haven't been cheating. Many players will declare their attackers without giving you the opportunity to tap them down first. In almost all cases, that's an acceptable shortcut, and it's fine for you to reject the shortcut by saying you're using the Lawkeeper's ability at the beginning of combat. It would only be cheating if you specifically waited until after the attack so that you could trick your opponent into revealing more information, then tried to back up and say, "no wait, you can't attack actually. I'm tapping that guy down." The most common resolution for this is for the active player to explicitly pass priority in the beginning of combat step. Normally, this is done with a simple question like "attack?" or "go to attack step?" You'd respond to that question by activating Gideon's Lawkeeper , and targeting a creature that you suspect will attack.
