If my opponent destroys my Cavern of Souls and I tap it for colored mana in response. With the Cavern of Souls in the graveyard do I still need to use that colored mana to cast a creature of the named type? Is the summon spell still uncounterable even though the Cavern is in the yard?

Can I use Cavern of Souls to generate colored mana for a Shapeshifter spell like Crib Swap? If I can, is it uncounterable?

Yes, the restriction on the mana stays.

Crib Swap is not a creature, so you can't use the Cavern's mana on it.

The colored mana you generated can still only be used for spells of the appropriate type even Cavern is not on the battlefield.

Cavern can generate colored mana for tribal spells of the appropriate type, so yes. I stand corrected.

Cavern of Souls only let you cast Creature spells, not Tribals.

I am confused by the effect of this card for choosing a creature type. I'm sure it's fairly obvious but could someone perhaps explain it better?

as that land enters the battlefield you choose a creature type, for example Giant

next time you cast a Giant you can use the Cavern to make that spell uncounterable.
